("At Colonnata the Lard comes better!) not
draft of a boasting, but of a truth that you can verify tasting
one soft slice of Lard, that it is melted to you literally in
mouth.
We are in the heart of caves
of marble of Carrara at Colonnata, 300 inhabitants of which
14 producers, it surrounds from forests of secular chestnut
trees to one altitude to you of 550 m. A landscape with mounts
characteristics, also being only 10 km from the tirrenica coast
and rich of the bimillenarian history of the marble excavation.
The high quality of the Lard
of Colonnata derives from several factors:

The taken care of handicraft
attention that expects the manual working;

the period: only in the
months from September to May;

from raw material coming
from base from the back of the pigs of great ransom (at
least 160 kg of weight)breeded in the center-north Italy,
according to tradition, or from the pigs of encircled race
Senese of the Tuscany.
